I'm conflicted regarding the no butter thing. On the one hand, New Orleans food emphasizes feeding everyone, and it is made with every kind of variatioin to suit everybody's dietary needs (seriously, kosher New Orleans food is a tradional thing).
On the other hand, when Alexx and I were returning tot he airport after our time in New Orleans, we had a cabbie who was *appalled* that we didn't cook much, and he began reciting hist best recipes, which all began with "You take a stick of butter..." Except for the dessert recipe, which began "You take two sticks of butter..."
So now that si the phrase we use to describe all New Orleans food, "You take a stick of butter." I was raised on Italian food, so I thought I knew waht rich food was, but then I went to New Orleans, and it has its own scale.
But the bottom line is, everybody eats when they go to New Orleans (riffing on Cab Calloway's "Everybody Eats When They Come to My House").
