Ooh! Ooh! I know! the lollipop stick could be the optic nerve... and if you want to stick them into a cupcake (or full cake), you could decorate that to look like the brain!
I kept thinking that making the optic nerve red didn't seem quite right, but I couldn't think of a better option. I have a knitted eyeball which I got from the office of my ophthalmalgic [sp?] surgeon--there was a glass jar of knitted eyeballs on the nurses' desk, but no one would admit to where they came from, except for the sign suggesting that this si what happened to rude patients--and I can feel the little curling optic nerve on the back of the eyeball. Perhaps you could also do this with a squiggle of white icing?
